Poached Pear Cake (Ciasto z gruszkami)

Here it is! Whole spiced-up poached pears, studded in moist vanilla cake.

    6 small, peeled pears (with intact stems)
    4 cups water (1 liter)
    1/2 cup caster sugar (100g)
    juice and zest from 1/2 lemon
    1 tsp ground cinnamon
    2 cloves
    1/2 tsp nutmeg


    180 g unsalted butter (room temperature)
    3/4 cup caster sugar (150g)
    3 eggs
    1/2 tsp vanilla extract (or 7g vanilla sugar)
    1 and 1/2 cup all purpose flour (190 g)
    1 tsp baking powder
    5 tbsp milk (40 ml)


Poaching Syrup:

In a large saucepan combine water, sugar, cinnamon, cloves, nutmeg lemon juice and lemon zest. Stir everything until the sugar is dissolved.
Place peeled pears (with intact stems) gently in the pot and bring the mixture to boil.
Reduce the heat and let simmer for about 10 minutes.
Turn heat off and let the pears cool in the poaching liquid.
After about 5min drain and set aside.


Pre-heat oven to 325F (165C)You would need a round 24cm springform cake tin. Grease and line the base of the form.

Sift flour and baking powder together and set aside.

Cream butter and sugar until light and fluffy. Add eggs, one at a time, ensuring that it has been well incorporated before adding another. Add vanilla extract and mix.  Fold flour and baking powder, stir, slowly add milk and slowly mix until batter is smooth.

Pour into the cake form.

Take the pears and gently push each pear around until reaches the bottom of the form.

Bake for 70-80 minutes or until a skewer poked in the center comes out clean.
